Hi,
you can also use ordinary street maps. Rand McNally is one company publishing maps for just about every state. They are very detailed. If you pick small roads, you'll be seeing a lot of the "real" America, not just what most other cyclists get to see by using the 'Adventure Cycling Association' maps.
While travelling, ask locals, they quite often know of beautiful sideroads that aren't part of any official bike path / tracks.
